A Great Recipe For Pumpkin Bread

This is the time of year when many of us gardeners are looking at 50 pounds or more of pumpkin and wondering what on earth we should do with all that pumpkin. Earlier in the week I posted a recipe for Pumpkin Butterscotch Muffins that came from Toaster Oven Reviews, a site that I love. Yesterday I tried another pumpkin recipe from their site: Whole Grain Pumpkin Bread. I was equally impressed with this recipe. It has whole grains, something that is important to me.One interesting thing: it uses two different whole grains, oat and wheat. By doing this it benefits from the strength and gluten of the wheat and the softness of the oat. A lot of whole wheat products taste like cardboard. The oat changes that. But if you use all oats, the bread is not strong enough and it just falls apart. Baking, like life, is about balance. And the grains in this recipe are balanced perfectly. So are the flavors.

The recipe calls for dried cranberries inside and walnuts on the top. I plan to experiment with different fruit and nut combinations. I'll keep you updated.
